My name's Monique and welcome to my channel. I'm a teacher by day, and cooking has been a passion of mine since I picked up my first spatula! It's my hope to help you feel at ease in the kitchen, while learning how to make delicious food.
Born and raised in Toronto, I pride myself on becoming familiar with international food that reflects my multicultural city. Jamaican by heritage (and a few other places according to that ancestry DNA test I did), so if you're big on learning how to cook some traditional Caribbean meals, you've come to the right place!
I'll be uploading recipe videos once a week, if my tendency to procrastinate doesn't get in the way (you've probably noticed that it took me about five years to actually upload my first video here :P ).

Why baking powder my Mom Never use it een my GreatGandma and their parathas are very softand 😋😋😋♥️🇺🇲🦅🇲🇺🦤
I know some people don't use baking powder (esp. if you're making roti the traditional Indian way with ingredients like atta flour). I find baking powder helps develop the pockets of air that's needed in this style of roti/paratha, and it keeps it nice and soft. It's all in the technique. 🙂

If you didn’t get a tawa yet, Amazon has really cool Victorian cast iron tawa and target has other great tawa too. I like your tutorial, easy and straightforward ❤.

Hey Monique--i'll give your recipe a try. It looks deliscous though. At 05:37 you can hear the Caribbean/Jamaican accent--"mash up" lol, I usually put coco-milk in my red peas beef soup---euhhmm-euhhmm good. Thanks for the upload

@@yourecooking I tried your recipe and it is delicious. If one knows what they're doing--which you obviously do--then you can't go wrong with this recipe. Of course I love all the add-ins--(thyme, onion, scallion, garlic, pimemto seed, scotch bonnette pepper..) and how they form the base flavors for the soup. I made these and they are absolutely delicious. I used curry powder instead of the paprika and they were a huge hit. Overnight "marinade" with the dry rub makes a big difference in flavor. At least I thought so.
Ooo... Curry powder sounds like a nice mix for these! If I have patience next time I'll let mine sit for a while too before cooking. 😅 Happy yours came out so well!

Amazon has a 15 in cast iron tawa for $50. I bought one and it’s perfect for both small and larger roti.
